I had fruit, I had chicken, Hmmmmmm… this is what I came up with and honestly, I could not be happier! I loved loved loved it!
Bear with us in the video, it is a bit long as I took a few detours with the toddler. He’s seems to be able to help more and more but still gets easily distracted. Ahhhh the joys of toddlerhood!
I’ve changed the amounts slightly now that I made it once. It could have used a bit more chicken and that helps even the servings to 4.
- 8 oz cooked chicken breast (I used short cuts)
- 1 cup cubed honeydew melon (170g)
- 1 cup cubed mango (165g)
- 1 cup grape tomatoes halved (150g)
- ¼ cup plain non-fat yogurt (57g)
- juice of one lime
- 1 tsp dried cilantro
Mix all ingredients together and serve. Goes great on a whole wheat pita!
