Quick Ramen Noodle Lunch – Video Post

I can’t be the only one who lived of Ramen Noodles in college, can I?
Well they finally lightened them up and in a pinch they can be used to make a quick lite meal! Seriously! Check it out…

- about 1 ½ cups of water
- 1 package of Choice Ramen Noodles chicken or shrimp flavors
- About 1 cup broccoli
- 3 oz cooked frozen shrimp
Cook the noodles according the package. Add the broccoli and shrimp in at the end and continue to cook for about 1-2 minutes.
Serve! Can’t get any easier then that!!
This would also work with leftover cooked chicken, or those short cuts even leftover pork chops cut up would be good!

LOVE this idea, Roni! I also remember eating ramen noodles a lot when I was younger, my 8 year old daughter loves them and I keep them on hand for a quick lunch for her, but since they do have a lot of sodium I dont eat them anymore…..I will definatly be looking for this lighter version…although here in Idaho things like that are hard to find. (just a quick side note, I thought it was comical how you called them “Ray-men” noodles, not sure if thats what there called where you live, but I’ve always heard them called “rah-men” noodles) Not sure if thats just a differnt part of the country thing, kinda like over here we say coke instead of soda or couch and not sofa…..anyhoo…great job!

Ah Roni….with the toddler….without the toddler….we just can’t get enough of Roni! So it’s OK either way. I hope I can find these lighter Raymen noodles around here in central Illinois.
Great new hair. I agree about the bangs though. I cut bangs into mine with my last new style about a month ago. I love the style but hate the bangs. I pin them back every day :-)
I think the ramon noodles are a great idea. They open so many doors. I would be interested to see a Thai ramon meal with some chicken, coconut milk, mushrooms and a bit spice from some red chili sauce (in the asian food isle). I bet you could make up so great dishes.

looks great! I’ll search for these ramen noodles in Alabama. FYI… down here, I say “ray-men” and my husband says “rah-men.” I guess it’s not a regional thing, it’s just a preference!
what brand of rayman noodles did you use?
live on them and perogies in college. you can even make ramen noodles look gourmet – what talent!!!! hope mothers day was fun!!

Hey Roni, I was only able to find the Beef flavor Choice Ramen noodles in my grocery store. Have you tried that flavor yet??

Looks so great. For those who can’t find the lite version, a fun substitute (not quite as quick though) are Japanese udon noodles. They’re lightly texture and sort of creamy like Ramen, but they’re available in pretty much any supermarket these days. I make them with shrimp, too. Sometimes carrots along with the broccoli. Such a great flavor combo.
And for the record, my sister and I always said “rum-yahn.” WAAAY wrong. :)
Just picked these up today…. wish I could squeeze them in my diet today. Can’t wait to give them a try! …And on 29 cents! Can’t beat that!
I think I’m a big kid cos of how much I still love noodles and jello.. etc. One thing- I think you were saying but I just can’t pick it up- maybe the American accent? (I’m British and not used to it) How many points for a packet of these lighter noodles?

Ramen noodles!! WOO HOO – and we say RAY-men too! They make them right here in Lancaster County where I live but I haven’t been able to find them in the supermarket yet!!!??!
Let’s go NISSIN!! Get them to my local Giant or Weis!!!

OMG – I tried these today and was shocked at how they taste just like the regular ramen noodles, which have quite a bit more fat! My kids like to make ramen noodles for a quick snack sometimes, so I will only be buying these Choice Ramen noodles in the future.

Me again! OKay I searched and SEARCHED my area for this product without luck. Then today on TOTAL accident I stumbled across a similar product. So for those of you unable to find the CHIOCE ramen, look for the KOYO ramen in the organic section of your grocery store! I found mine @ Fred Meyers! They are 200 cals, 1g fat, 3g fiber for each package and YUMMY!!!!!

This is soooo yummy!! It took me a while to find the Choice noodles in the store but I finally found them at Bruno’s. I only used half of the noodles and about a cup of water. I added frozen broccoli, corn, and seasoned onions and it was awesome! I used about 1 teaspoon of the flavoring and it was so good! I also made the broccoli slaw and raymen noodle salad and it was still just as good as the regular noodles! Thanks for the idea!

I wanted to comment about the pronunciation also with the way you said “ray-men”. I found it funny to hear it that way since I was raised to say it as “rah-men”. It’s interesting how living in a certain area of the country will change the way you relate to words! :)
About the actual noodles themselves, I haven’t seen those types of noodles where I shop but will keep an eye out for them because I, too, ate lots of those prior to counting points.

LOL – You aren’t the first to call me out the RAY vs RAH but yeah, it seems regional. Check the same aisle where the regular noodles are, sometimes the “light” are hard to find.
