Gooey Surprise Deep Double Chocolate Muffins – Contest Finalist 2

I’ve been waiting to make this finalist. Such a simple idea and who doesn’t like GOOEY CHOCOLATE?!?
Well after dinner the toddler and I hit the kitchen. We had a blast making them (he was able to help a lot) and the results were tasty! The addition of just 3 little chips and marshmallows really did make this delisciously gooey center! 
Note from Roni: I had a few marshmallows peak out the top. Next time I make them, I think I’ll fill the cups a little less. It didn’t matter through they were still DELISH!
- Non-stick cooking spray
- 1 package Deep Chocolate VitaMix (Chocolate Muffin Mix)
- 2 egg whites
- 1 1/3 cups of water
- 36 miniature marshmallows
- 36 chocolate chips
Heat oven to 400 degrees
Place 12 paper cupcake liners inside regular size muffin tin. Spray each paper liner with non-stick cooking spray.
Prepare muffin mix according to package instructions.
Fill each muffin cup 1/3 full of batter. Place 3 miniature marshmallows and 3 chocolate chips in center of each muffin cup. Fill muffin cup with additional batter so the cups are 2/3 full of batter. Use a spoon to seal and cover the fillings inside the muffins.


Bake about 27 minutes, makes 12 servings 1 muffin each.
P.S. The husband just had another one! He said he may give up his Tastycakes!

Hey Roni et al,
Can you compare for me the ease of extraction between Vitamixes and No Pudge? (If you are familiar with No Pudge.)
I’ve been using No Pudge, because Vitalicious was previously unavailable in my area (until this past week when I spotted them at Shaw’s), and I’m mail-order phobic.
With No Pudge, even with muffing tin liners and non-stick spray, actually getting to the yummy goodness was challenging.
I’m asking because in the pics featuring the Toddler, it doesn’t look like you actually used liners, though you mentioned liners in the instructions.
So, how easy was extraction without liners?
I’m hoping that the small amount of fat in Vitalicious mixes, compared to absolutely none in No Pudge, makes the job a bit easier.
If that’s true, then I’ve got some antique baking pans in interesting shapes that I’m eager to try using Vitalicious mixes.

Joy – I have never had No Pudge, do you believe it!?!? LOL
You were right, I didn’t have liners so I skipped them. I routinely use VitaMixes with just non-stick cooking spray and never had a problem with them sticking.
Ohhh, sort of like rocky road chocolate muffins?! I think I’m in love!!!

I just broke down and ordered some muffin mix online. Apparently canadians don’t get access to such great mixes:)
