[...] My mom and I finally sat down and planned our weeks worth of meals. We took a lot of inspiration from not only my sister but also a woman named Roni, who is a fantastic cook and comes up with a ton of great recipes! We made quite a few of her recipes including the Tortilla-Less Tortilla Soup, Southwest Chicken Salad Topper, and Sweet & Spicy Black Bean Dip.
Kelly - You know I LOVE Trader Joe's but I have no idea how they get theirs SO SMOOTH! After I made my own I kind of like it chunky better. I used a lot of the same ingredients that are listed on there but the flavor was different.

The Wegman's brand Black Bean Dip is very good, and it seems to always be available in that store, as are many things that are often hard to find in other stores. I will try the homemade version as well!

my favorite black bean dip is simply 2 cans black beans (drained), 1 jar salsa, lime juice cilantro.

blend until as smooth/chunky as you like. chill.

i can eat it straight from the bowl!!!

Roni,
I think you live near Wegman's. I spotted a Wegman's brand fat free bean dip in the chip aisle today. I didn't get it because I still have a stash from my last TJ's trip!
