I made these tonight for a light dinner. My hubby and I leave for vacation in a couple of days so I’m trying to purge all of the perishables from the fridge which included two zucchini (makeing the Tortill-less Tortilla soup too) and oh my goodness….fantastic! Never would have thought of it, but love that crunch texture and pizza flavor minus the calories. What a great treat!

Good idea. I have recently discovered polenta. I like corn meal and just bought some. I didn’t know it was core though! I’m still learning mu core list!

What about making these with polenta? I think it would work well with store bought premade polenta. For those on the Core plan polenta will not cost any points. You might have to spend points on the cheese if it is not fat free. I have not seen you use much polenta. Is it something you like?

Roni – I read your blogs daily and love watching your video posts. It is so fun to see your toddler get so involved, reminds me of my 6 yr old, she is always helping me in the kitchen!
