Simple Quesadillas – Video Post

Alright, so I’m a HAM! I’m really liking the video posts thing. They are so much fun to do and I get a break from typing!

This technique is a favorite of mine when I want a quick snack. I posted about it way back when on weight watchen but showing you is so much easier then trying to explain it in a blog post.

Ingredients used in Video

Keep in mind you can use any filling you have on hand, leftover cooked chicken, beans, bean dip, lean ground beef, leftover taco filling, really, ANYTHING!

    I love your water pot trick! It works beautifully - the quesadilla gets so golden and crispy. I can’t wait to try this out with a panini. I also have to say, I recently tried tried your Spicy Buffalo Chicken Salad and it is so amazing! Keep it up!

    Roni your video is good. Nice and natural. I will try it your way. The only thing is to get rid of that pan. It is very unhealthy to cook with a non stick pan, especially if it is in bad condition.

    I have cooked 2 butternut squashes since your awesome video on how to cut it up. Thank you SO much! I’ve always loved to eat them, but couldn’t figure out how to attack it without just slicing and adding tons of butter brownsugar. Your post was a refreshing alternative! Thanks.

    And now the Quesadillas. One of my FAVORITE snacks. I make mine much like yours, but not with the pan of the water as the lid. I’m going to try it for lunch.

    Mmmm. I have spinach and red peppers in my fridge and low carb tortillas too! I see a quesadilla in my future now!

    I also will leave a second vote for spaghetti squash. I have one in my refrigerator too, and I’m nervous about making it as I’ve never made it before. Tips? Thanks!

    Roni:You are so cute in these videos! I totally see you on the Food Network. Just make sure they show you in Canada!
    I just love your ideas and tips. As someone else said, I learn something new every time I log on…(which is a few times per day…don’t be scared…I am not stalking you…just love the motivation that your site provides to me.) I love the cup on the scale trick. I am always trying to pile them on top of the scale which I am sure does not give me a true reading.

    OMG!! I am totally hooked on quesadillas!! I’ve seen a lot of recipes for them lately and watching your video, got me interested in looking for a healthy WW friendly tortillas and I found them today at my local grocery store. The brand name is “La Tortilla Factory Smart & Delicious Tortillas”, they are low carb & high fiber. Serving size is 1 tortilla, calories 50, fat grams 2, dietary fiber 7 = WW points for one serving “0″, WW points for two servings = 2. I made two servings of a fresh spinach, 2% cheese crumbles & leftover smoked turkey (dark meat=drumstick) quesadilla and I have to say they were really good. The WW points came out to 10 for the two servings, but I’m sure if I used something like the Laughing Cow cheese or leaner meats or all vegetables, the points could be lower.

    p.s. I have to say that I just love your site and it helps me stay on track.

    Loved the video too. I agree - time for a new pan - for health reasons - I have heard that when they get old they start transferring “things” to the food.

    Was the pan of water (weight) HOT or cold?

    It was so much fun watching you cook. I love quesadillas too and your technique of putting the pan on top is genius!

    The part of the video where you talk about how the preparation of the food is part of the satisfaction is so true! I love to cook as well and I totally need the whole process to enjoy what I am eating. Even if is is leftovers, I still feel that “love”. I have never thought about that before, but is is very true.
