Leftover Turkey and Couscous Stuffed Peppers

All right, this will be my last leftover turkey dish, I promise! It’s just that I have all the turkey and I love coming up with new ways to use it. Geek, I know, I told you that, right? ;~)

So I avoided the ‘what’s for dinner’ question like the plague tonight. This just isn’t the husband’s kind of meal. Couscous, spinach, peppers, these things weren’t even in his vocabulary a few months ago! He finally saw the peppers and said, “oh, stuffed peppers”. Notice the lowercase “oh”. It’s isn’t an excited, OH! More like a disappointing “aw, crap!”

So I placed a pepper on his plate and watched him pick at it for a bit, taking a few bites. Nothing was said until I asked, “What do you think?”

and I get a run of the mill, “It’s good.”

“Good?” I said “Do you even know what it is?”

“No, what is it?”

“Couscous”

“What? What is that?

“Just small pasta”

“Oh, alright.”

He then proceeded to eat the WHOLE THING! Pepper and all! I am still in a state of shock. Apparently, if it has leftover turkey in it, the husband is game. ;~) Leftover Turkey and Couscous Stuffed Peppers

  • 1 cup turkey or chicken broth (separated)
  • 2/3 cup of Whole Wheat Couscous (124g)(available in the store)
  • 1/2 of a red onion diced (about 110g)
  • small zucchini diced (about 130g)
  • Salt & Pepper
  • 1/2 tsp ground sage
  • 1/2 tsp thyme
  • 6oz leftover cooked turkey meat shredded and diced
  • 2 cups baby spinach leaves (60g)
  • 4 medium peppers
  • Non-stick cooking spray

Preheat the oven to 425 degrees

Bring 2/3 of the broth to a boil in a small pot. Remove from heat, add the couscous and set aside.

Cut the tops off the peppers, clean out the seeds and roast for 10 minutes.

Spray a large (and I mean large) skillet with non-stick cooking spray and cook the onion over medium heat for a few minute allowing them to get soft. Add the zucchini, sprinkle with salt and pepper. Continue to cook until zucchini just starts to tender.

Add the turkey and cooked couscous to the skillet. Sprinkle with sage and thyme. Stir allowing the meat to warm up. Add the remaining broth if skillet seems dry.

Add the spinach last, stirring it in until it just starts to wilt.

Remove the peppers from the oven, fill them with the couscous mixture and return to the oven for 5 more minutes.

I served, with a side of Curried Sweet Potato Fries, YUM!

    I LOVE couscous – of course it helps to have a mother who is Moroccan! It was a winter dish for me growing up and now that I eat it so much I don’t know why my mom didn’t whip it up more often. Must have been ‘how’ she made it – very heavy on the cabbage and meat!

    I like to use it for any dish that you would eat with rice. Mostly I wing it but tonight (how timely!) I made a recipe for Moroccan (go figure) stew out of the current issue of WW magazine. It was a super easy one pot meal (you know how we moms love that!)and it called for putting it over couscous. I also like it plain with chickpeas and a sprinkle of splenda! It is very versatile.

    My only problem is that my husband does not like it despite my many tries – Boo!

    Will I ever get back on track and lose the last of my extra weight. The harder I try the more I put on….
    I love weight watchers…I want to be a leader and yet I can;t reach goal….Weight loss to date….170. Weight gain to date….1 trillion he he…. I don’t really care how much I lose, I just want to reach WW’s goal and be a leader.

    Everyone says I am such an inspiration to them. Well, I need inspiration.

    Nancy – Wait a minute…. you lost 170LBS!!!

    You are an inspiration. And guess what, you WILL get on back on track, you HAVE to. I’ve been at goal almost 2 years and it’s a struggle every day. Whether you are “on track” or “off track” you still moving forward right? Doesn’t it go smoother and easier when you are on track? Don’t you feel better about yourself?

    I made the Leftover Turkey and Couscous Stuffed Peppers
    tonight for dinner…a big hit and sure to make again. Just wondering where the remaining 1/2 c. of broth is used? I used it last when the spinach was wilting.

    Is the nutritional information based on one whole pepper? I’m assuming that’s without the sweet potato fries. :)

    Hi Roni. My 16 year old son made your stuffed peppers and they were quite delicious. He used yellow and orange bell peppers and they looked good and tasted fantastic. I made your savory sweet potatoes to go with them. We’re having fun and bonding using your recipes. I am happy to eat healthier too!!
