Curried Sweet Potato Fries

I was a sweet potato late comer. For some reason, as a child I thought I didn’t like them. I didn’t even try them until I was pregnant. Looking for nutritious foods, I read up on the good old sweet potato. Full of Vitamin A, Vitamin C, high in fiber, low in calories what more can you ask for?

I mostly eat my sweet potatoes one of two ways, straight up baked or like below. When I bake them, I eat them plain, skin and all, with just a bit of salt and pepper. I find the flesh of the potato super moist and just perfect. However, when I cut and bake them in fry pieces a little curry powder does wonders!

And yes, the toddler and I LOVE dipping them in ketchup!Curried Sweet Potato Fries

  • 1 Sweet Potato cut into strips
  • Non-stick cooking spray
  • Kosher Salt
  • Curry powder

Preheat the oven to 425 degrees.

Line a cookie sheet with aluminum foil and coat with non-stick cooking spray.

Spread the cut sweet potatoes on the cookies sheet. Spray the tops with non-stick cooking spray and sprinkle with salt and curry powder.

Bake for 30 minutes turning once during cooking.

    Hi Roni. I love your sites. Thank you so much for sharing your wisdom and creativity with us. The recipes are great and easy. I’m not a fan of the WW website for recipes; too difficult to find certain things and some recipes are too difficult to make. I LOVE the frattata (which I just made for dinner!!!). I plan to make the sweet potatoes over the weekend. I’ve been on WW since the end of May and I’ve lost 63 lbs (plus I lost 30 lbs before starting WW after the birth of my second child for a total of 93 lbs.) I just made LifeTime today and plan to stick with it. STill have about 7 lbs to go to my ultimate goal. My big issue (besides exercising) is finding good foods to eat. Just wanted to thank you again for everything. I know everyone has said it, but you are a huge inspiration to us all. Hope you and your family have a wonderful New Year.

    Mine don’t come out that crunchy but I like them that way. Experiment with the size of the cuts and the heat.

    Made them tonight as well as the tilapia and they were fabulous. Mine weren’t crunchy either, but I didn’t care. I just need to add more curry next time. Thanks, Roni!

    I made these tonight but I decided to cook without the curry. I just used some salt. Then I made a curry dipping sauce of 2 tbls. fat free sour cream and 1/2 tsp. curry powder. I enjoyed it, but honestly probably could have been perfectly happy with the potatoes plain, too. I am also so inspired by you Roni! I’m a good cook (so I’m told) but had lost my desire to come up with new, healthy, creative ideas. Your site has really helped me out! I can’t thank you enough for that.

    These are awesome! I used a little different spices….chili powder, garlic powder, and some onion powder. It gives a nice little spice to the sweetness..YUMMY!!!     I’m going to have to try this. I’ve always associated sweet potato with sweet so this would definitely be different. Like you I was late with the sweet potato too and when I did try it it had to have pecans or marshmallows on top. Then I tried baking in the microwave and sprinkling with pumpkin pie spice. So yummy!!
