Joan - I would reboil the crap out of it. Honestly, I've done the same thing without any problems. If it smells funny after a reboil then it's no good.

I boiled and simmered my stock last night. I turned off the stove at 9:30 pm with the intention of putting it in the fridge after it cooled down a bit. However, I fell asleep. This morning, 6:45 am, I woke up to the covered stock pot on the stove. Woops! Can I re-boil it or should I throw it out? Thanks!

Sorry Libby, I TOTALLY forgot about your question.

I've had a carcass for about 5 before boiling it, I'm not sure about 10 though. Did you use it? Are you still alive?? ;~)

I started to make this soup, and got to the step just before skimming the fat off... then we unexpectedly had to go out of town, so here's my question: Can I still use the broth I have in the fridge now? It has been refrigerated for ten days. (With the carcass and everything...) I still want to make the soup, but I don't want to give everyone food poisoning!
~Libby
p.s. It looks good still, and smells fresh still!

I made turkey stock for the first time last night!

I added parsnip, onion, celery, carrots, mushrooms, bay leaf and about a 1/2 t of thyme.

Another idea for soup is to add some diced cooked sweet potatoes and maybe some beans!

PS. Love the new site.
